French Pinot Noir
Pinot Noir is a fickle beast and comes in many guises; the flavours tend to stay similar however, so it's always a great match for a variety of poultry dishes, from richer chicken dishes to duck, quail and even pigeon if you're feeling fancy. This wine works really well with rustic French cuisine obviously too - think Lyonnaise sausage with beans, beef cassoulet and of course beef bourguignon. For a fishy change, go for richer fish like salmon, tuna or swordfish.
